Hello foodies ,this one was supposed to be posted really early but due to some reasons could not post it .So here I am with this beautiful,simple yet full of flavours dish "HERBY GARLIC BUTTER ROAST CHICKEN WITH LEMON  SAUCE"

It is kind of a dinner dish but goes really well when calling over some non vegetarian guests cus its really simple to make.It requires a little bit of preparations.The smell that comes out of the oven will definitely make you go crazy .So without wasting anymore time let's jump onto the recipe.

HERBY GARLIC BUTTER ROAST CHICKEN INGRIDIENTS:-

  • Chicken drumsticks-4 -5
  • Garlic-7-8 cloves (finely chopped)
  • Green chillies-2(finely chopped)
  • lemon juice-2 tsp
  • Oregano-1 tbsp
  • Thyme-1 tbsp
  • Rosemary-1 tbsp
  • Parsley- 1 tbsp(you can always substitute the parsley with coriander leaves )
  • Black pepper-1/2 tsp
  • Salt-to taste
  • Olive oil-1 tbsp
  • Butter-3 tbsp
METHOD:-
  • Wash the chicken drum sticks throroughly under running water and transfer into a clean bowl
  • Marinate the chicken putting all the above mentioned ingridients and pop it into the refrigerator for at lease an hour (overnight works the best)
  • Once properly marinated wrap each chicken stick into alluminum foil and bake into a preheated oven at 180 degrees for 15 mins
  • After fifteen minutes take out the chicken sticks and unwrap them
  • Melt the butter in a bowl 
  • Prick the chicken sticks using a toothpick very gently ( try not to shred the chicken)
  • Dip the chicken drum sticks into the butter and let it rest into the butter for 20 -30 mins
  • Once all the butter is seeped into the drumsticks ,tranfer the chicken into a baking dish and this time with no foil on
  • bake at 200 degrees for another 10-15 mins or till it becomes nice and crispy and golden brown in colour
"LEMON HOLLANDAISE SAUCE INGRIDIENTS"
  • 2 egg yolks
  • 2 tbsp water
  • Butter-1/2 cup
  • Lemon juice-2 tbsp
  • Lemon zest 1/4 tsp
  • salt and pepper-to taste
  • Parsley-finely chopped- 1 tsp
METHOD:-
  • Take a pan and fill it half with water and allow it to boil.oce it boils ,lower the flame and put heatproof bowl over the pan.The water should not touch the bowl but it should get the indirect heat 
  • Add the egg yolks and water to the bowl and cook for 10 mins continuosly stirring or else the yolks will scramble 
  • Cook till the egg yolks thicken and becoome shiny .Also the raw smell of yolks should go away
  • Now add  1 tsp of butter at a time and mix well.Repeat till all the butter is nicely incorporated into the sauce.Now this is the time to check the consistency of the sauce .If you feel its too thick u can always add more water and adjust the consistency
  • Add the salt ,pepper and parsley.Be very careful with the salt if using salted butter
  • Take the bowl off the pan and add the lemon juice and mix well
  • TA-DA ..You are done with the sauce
