" CHICKEN ROLLATINI WITH MANGO VINAIGRETTE AND BEETROOT CULIS"
This one is always going to be the special one for me because it helped me reach the top 30 of "masterchef india season 5"..The chicken is stuffed with ricotta and spinach cooked in orange chilly and garlic reduction..Now ,let me make this clear that this recipe is very simple but don't panic after looking at the steps because there are too many..Be patient ,follow the recipe and you'll get something like this at the end of the day.

CHICKEN ROLLATINI INGRIDIENTS :
  • Chicken breast - 1 whole
  • spinach-1 cup
  • orange juice-1/2 cup
  • garlic-3-4 cloves
  • chilly flakes-1 tbsp
  • black pepper-1/2 tsp
  • salt-1 tbsp
  • onion- 1 small
  • ricotta-1/2 cup
  • brown sugar or regular sugar- 1 tbsp

METHOD-
  • Take a small pan and add some oil to it.
  • Heat up the oil a little bit.add finely chopped garlic to it.Allow it to cook for a couple of minutes on low flame or till the raw smell of the garlic is gone
  • Add finely chopped onions and cook for 3-4 mins or till it becomes brown.
  • In another saucepan add  some water ,salt and sugar and let it come to a boil.Add the spinach leaves for 10 seconds and transfer  it to another bowl with ice cold water in it.
  • Finely chop the spinach
  • Add the blanched chopped spinach and ricotta and cook till all the moisture dries away
  • At this point add the orange juice ,sugar ,chilly flakes ,salt and pepper and reduce the juice till it becomes nice and thick
  • Allow the mixture to cool
  • Take the chicken breast and slit them into two halves
  • Take one half and hammer the breast into a thin sheet.(Now if you don't have a chicken hammer ,you can also use a rolling pin to flatten it but the chicken should be really thin otherwise it won't cook evenly)
  • Take the flattened chicken and apply the mixture on the chicken and roll it like a wrap and seam the end using a toothpick or if you are an expert you can tie the roll with the thread.
  • Fry the chicken using a little oil over the grill pan over medium heat.
TIP:-
If you are left with the juices out of the mixture in the pain,don't throw it into the sink .Now what you can do is toss the rollatinis into that sauce.It adds a wonderful gloss to the rollatinis and a beautiful flavour .

MANGO VINAIGRETTE INGRIDIENT

1.)    1 cup diced mango pulp

2.)   1/4 cup fresh orange juice
3)   1/4 cup rice vinegar or normal white vinegar
4)   2 tablespoons fresh lime juice
5)   1 tablespoon brown sugar
6)   Salt to taste
7)   Freshly ground black pepper

8)   Garlic cloves-2-3 tsp

9)   Fresh chillies
 
10) 1/4 cup olive oil( extra virgin is better)


METHOD:-
  • Into a blender  add the above mentioned ingridients except for the oil
  • blend ,blend,blend till everything is well combined
  • Now add up 1 tsp oil at a time and blend and repeat till all the oil is consumed 
"BEETROOT CULIS INGRIDIENTS"

  • Beetroot -1 cup
  • Olive oil-1/4 cup
  • red chillies-2-3
  • salt to taste
  • ginger-1 inch
  • lime juice-2 tbsp
METHOD-
  • Blend all the above mentioned ingridients into a mixer and grind into a fine paste.

This is a really nice dish to have when you are so bored with the regular stuff you eat.Requires a little bit of effort and time but the the end result is totally phenomenal and worth the effort.Plate it really well for your loved ones and treat them with something goog,I did it the way under-
