KATEIFI CONE MY WAY!!

Hello foodies,
I  am back with another Ramazan recipe.This one is a dessert.  A Greek inspired dessert which is packed with flavours.It is called kateifi.
These beautiful cones are made out of shredded phyllo but phyllo is not easily available everywhere.Well!! there is nothing to worry about.I have come up with an easy peasy lemon squeezy method.
Also,the filling has ricotta cheese and honey which again is not easily resourcable Well,I have a solution for that as well.
So what are we waiting for . Lets dig in..

INGREDIENTS:-
For the dough

  • All purpose flour-1 cup
  • Oil-1 tbsp
  • Salt-1 tsp
  • Lemon juice-1 tsp
FOR THE SYRUP
  • Sugar- 1 cup
  • Water-1/2 cup
  • Cinnamon stick-1 
  • Cloves-2-3
  • cardamom pods-2
  • Star anise and chakkarphool-1
  • Lemon zest of 1 lemon
  • lemon juice of 1 lemon
FOR THE FILLING
  • Milk-1/2 litre
  • Honey-1 tbsp
  • Vanilla essence-few drops
  • Chopped walnuts-1/4th cup
  • Sugar-2 tbsp
  • Lemon juice-1 tsp
  • Cream-1 tbsp
METHOD:-
  • In a bowl combine all purpose flour, salt,oil ,lemon juice and water and knead a very soft and pliable dough.teh dough should be so soft that it should retrace back after you poke your finger into it.
  • Cover the dough and let is rest for 30 mins
  • Now make the sugar syrup by heating up the sugar ,water ,all the spices and lemon zest together .Simmer the syrup till all the sugar is dissolved .This should take about 15 mins on medium flame
  • Now switch off the flame and add lemon juice.Strain the syrup.and let it come to the room temperature.
  • Now in a pan boil milk and add lemon juice to curdle the milk.
  • Separate the whey from curd or chenna and then transfer the chenna in a mixer grinder
  • Add honey, vanilla essence, sugar,cream and churn until there are no lumps.
  • Take out the mixture in a bowl and add chopped walnuts to it.Transfer the mixture to a piping bag and keep aside.
  • Now take your dough ,divide into small balls and roll each ball into circles as thin as you can.
  • Now cut out very thin strips out the rolled circles
  • If you have metal cone moulds, roll the stripes onto the cones and bake at 180 degrees for 20 mins or until golden brown.
  • If you don't have cone moulds, what you can do is take the entire rolled circle and place it at the back of a ladle and deep fry so that it forms the shape of a bowl.
  • Now Pur the cold syrup over hot cones and let the cones absorb the syrup completely.
  • Now fill the cones with filling and enjoy the deliciousness..
