When life gives you lemon ,make lemon butter cookies out of it.These are really delicious and soft and have" melt in the mouth texture"..Do try and enjoy.

                                               LEMON BUTTER COOKIES

INGRIDIENTS-

1)-Butter- 1/2 cup

2)-Sugar-1/3 cup

3)-Vanilla extract-1 tbsp

4)-All purpose flour-1 cup

5)-Corn starch /custard powder-2 tbsp

6)-Lemon juice-1 tbsp

7)-Lemon zest or rind- ½ tsp

8)-Milk-2 tbsp

 METHOD-

1)- In a bowl,sieve all purpose flour ,custard powder /cornstarch, and keep aside

2)-In another bowl ,cream the room temperature butter,vanilla extract and  sugar until light pale in colour and fluffy

3)-Add lemon zest and juice to it and give it a thorough mix

4)-Add the dry ingridients to the butter mixture and give it a good mix

5)-Add milk to lighten the mixture so it resembles a super thick but smooth frosting

6)-Transfer it into a piping bag fitted with the nozzle of ur desired shape and pipe little sized cookies

7)-bake at 180 degrees for around 12-15 minutes
