Trust me when I say this ,"fresh is the best".Yeah!!! believe me,it does make a hell lot of difference when you use fresh things instead of dried or store bought .Just like my pasta that I made yesterday.
I love making things out of scratch.
So i made "EGGLESS HERBED FETTUCCINE IN TOMATO BASIL SAUCE".The dish sounds a little diffcult but trust me its the easiest thing to make if you have a little patience.
Do try and I am sure people are going to kiss your hands for sure. :P
EGGLESS FETTUCCINE INGRIDIENTS:-

EGGLESS FETTUCCINE INGRIDIENTS:-
- Refined flour/maida-2 cups
- Butter-1 cup
- Salt-to taste
- Parley-2 tbsp finely chopped
- Oregano-1 tsp
- Red chilly flakes-1 tsp
- Dried basil-1 tsp
METHOD-
- Take a clean ,dry bowl and sieve the flour into it
- Grate the butter into it and mix well till it resembles the breadcrumbs consistency (now when I say grate the butter ,I mean pop your butter into the freezer till it becomes rock hard and then grate it into your flour.It gives awesome results )
- Once the butter is nicely incorporated, add up all the herbs and seasoning
- Add a little water at first and kneed a soft dough .The dough should be so soft and that when you prick using your finger ,it should retrace back.
- Cover the dough and let it rest for atleast 20 mins
- Meanwhile ,take a pan,fill it with water,sprinkle generous amount of salt ,and bring it to a boil
- Now roll a thin round out of the dough balls ,sprinkle some flour all over the rounds ,so that it doesnot stick while cutting
- Roll the dough like cinnamon roll and cut thin stripes.
- Once you cut all the stripes ,throw them into the boiling water and allow to cook for 5-6 mins
TOMATO BASIL SAUCE INGRIDIENTS:-
- Medium sized tomatoes- 3 ,blanced ,peeled and pureed
- Garlic-5 cloves
- Onion-1 small,finely chopped
- Salt-to taste
- Pepper-1/4 tsp
- Basil-5-6 leaves(if using dried form the add 1 tbsp)
METHOD:-
- Take a pan and add some butter to it and some olive oil(any oil would do)
- Add chopped garlic and saute for not more than 20 seconds cus we want that taste of garlic
- Add the onions and sweat them well
- Add the pureed tomatoes,put the lid on and cook for atleast 15 mins
- Add the seasoning and turn off the flame
- Now add the basil leaves or dried basil,whatever you have in hand
- Combine the sauce and the pasta and enjoy
