Well!!! my daddy loves desserts and that too indian ones..So this one was made spontaneously just because he wanted somwthing sweet all of the sudden...
INGRIDIENTS:-
So here goes the recipe of my
“KEASRIYA SANDESH TART WITH PISTACHIO
PRALINE”
INGRIDIENTS:-
FOR THE SHORT-CRUST
1)-1 cup
refined flour
2)-2 tbsp
butter
3)-a pinch
of salt (because the butter already has salt)
4)-1 tsp
icing sugar
TIP- You
can add 1 egg yolk to it but that’s totally optional but if you eat eggs please
go for it
FOR THE SANDESH
1)-1/2 lts
of milk
2)-a pinch
of alum (don’t use lemon or vinegar to split the milk as they wont give the
granular texture to the milk which we require)
3)-1/2 cup
of sugar
4)-few
strands of saffron
5)-chopped
nuts (almonds cashews, and pistachios)
6)-1/2 cup
of condensed milk
7)-1/2 tsp
of cardamom powder
8)-1 tsp of
rosewater or rose concoction
METHOD-
1)-Sieve the
refined flour into a bowl and add the butter to it . Keep mixing and rubbing
both in between your palms to get a breadcrumb consistency
2)-Add the
salt sugar and egg yolk (only if you want to)
3)Add water
if not using the egg yolk to make the dough which should neither be very soft
nor very stiff
4)-Wrap in the
cling film and keep in the refrigerator while you are preparing the sandesh
5)-Now take
a pan and add the milk to it. Bring it to a boil and then lower the flame
6)-Add the
alum to the milk and keep stirring till it splits and form little granules
7)-Strain
all the excess water from the milk and put the pan back on to the low flame
8)-Add the
condensed milk and cook the mixture for 5 mins continuously stirring
9)-Add the
saffron strands and sugar and cook till
the sugar dissolves . Now the mixture releases a little liquid ,which means you
have to cook it till all the liquid dries out
10)-Add the
cardamom powder and rose water
FOR THE PITACHIO PRALINE
INGRIDIENTS-
1)-1 cup
sugar
2)-1 tsp
water
3)1 ½ tbsp
chopped pistachios
METHOD-
1)-Add the
sugar and water to a pan and caramelize the sugar
2)-Add the
nuts and spread on a greased plate so it comes out easily
3)-Allow to
cool down
4)-Break
into desired shape
Now you are done with the sandesh
tart .Garnish using the praline and serve.
