                     COCO -MANGO MANIA

Hey foodies,

The sun game is on and so is ours.We ,the people from tropics are blessed with ingredients which go really well together.

Two such ingredients are Coconut and mango.This cupcake is a delicious combination of these two ingredients.Super easy to make and super delicious to have post dinner.The nut-ness from the coconut and sweetness from the mango is a match made in heaven.

Lets get started

Yields-8 cupcakes

INGREDIENTS:-

• Refined flour-100 gms
• Brown sugar-75 gms
• Desiccated coconut-30 gms
• Baking soda-1/4th tsp
• Unsalted butter-50 gms
• Eggs-1 whole+1 yolk
• Milk-1 tbsp if the batter feels too dry
• Mango pulp-100gms
• Sugar-2.5 tbsp
• Lemon juice-1/4th tsp

METHOD-

• Preheat the oven at 180 degrees Celsius
• Line your muffin moulds with butter
• In a bowl whisk together ,butter sugar and eggs until pale and fluffy.
• Sieve together refined flour and baking soda
• Fold into the eggs and sugar mixture
• Now in a pan,Brown the desiccated coconut
• Add the coconut in the batter 
• Pour the mixture into your cupcake mould and bake till a toothpick comes out clean.
• Meanwhile .in a pan add the mango pulp and sugar and cook on low flame until all the sugar dissolves and it forms a jammy consistency.
• Now add the lemon juice and allow to cool down
• Make holes in your muffin using and apple corer or scoop out using round spoon
• Fill your Muffins with mango goo.
• Sprinkle colourful sprinkles on  top and serve
