Dump !!! the dumplings..

Hello foodies, here I am back again on the blog with some exciting and "easy to make at home" kind of recipes.
I promise to be consistent on the blog.

       To start with,I have an awesome recipe for you lovelies,the recipe of "LEMONGRASS AND CHICKEN DUMPLINGS IN SPICY CHILLI LEMON BROTH"
Its so hard to find dumplings in the town I live in.So I decided to treat myself with these amazeballs.This is surely a winner winner chicken dinner
Without any further ado lets get started!!


INGRIDIENTS 
FOR THE COVER

  • Refined flour-100 grams
  • Oil-1 tbsp(flavourless)
  • Salt-1/4th tsp
  • Water-as needed to knead a soft dough
FOR FILLING
  • Chicken mince-45 grams
  • Mushrooms-45 grams
  • Spring onion-1 whole stalk with the bulb
  • Salt-to taste
  • Fish sauce-1/4th tsp
  • lemon grass-1/4 stalk
  • Garlic-7-8 cloves
  • Ginger-1 inch
  • Green chillies-1 whole
FOR THE BROTH
  • Chicken stock-1 its
  • Red green chillies-8-10(deseeded) or chilly flakes-2 tbsp
  • Garlic-4-5 cloves
  • Lemon juice-2 tbsp
  • Fish sauce-1 tbsp
  • Salt -to taste(remember fish sauce has salt too)
METHOD:-

  • FOR THE COVER
  • In  a bowl, sieve refined flour.
  • Add salt and oil and rub well
  • Add water and knee the dough till it is really soft .
  • Cover the dough and allow it to rest for 15 mins while you prepare the filling

  • FOR THE FILLING
  • In a wok , add oil and heat up
  • Once the oil is hot enough, add finely chopped ginger, garlic,and lemon grass .
  • Saute well for a minute or two.Make sure you don't brown the garlic
  • After that ,add the finely chopped green onion, and sauté for one minute
  • Add minced chicken and mushroom together and cook for 7-10 minutes
  • Add fish sauce and salt 
  • Allow the filling to cool completely
Now its dumpling time.Once the filling is completely cold ,roll thin rounds out of your dough.5 inches of diameter should be fine.Fill with enough filling and give them desired shape.keep aside.
Now you have two options.
Either you can steam the dumplings for 10-12 minutes or directly boil them in the broth.

  • FOR THE BROTH
  • In a saucepan, add the chicken stock and bring to a boil.
  • Once the stock starts boiling, add rest of the ingredients except for the lemon juice
  • Boil the broth for 10 minutes
  • After 10 minutes ,turn off the flame and strain the broth.
  • If you wish to cook the dumplings in the broth, put back the strained broth over the flame and cook the dumplings for 8 minutes
  • Add the lemon juice now.
  • Check for salt and add more if you want to.
Ta da, the dumplings are ready to be dumped in.
Serve with your favourite noodles.
