Khira gaintha

 Khira gaintha is an old lost recipe from southern part of India.
It contains rice dumplings dumped in thick,decadant,flavoured and aromatic milk.
Do try this at home this Diwali and give your family a lovely  treat.
Serves -2
preparation time-2 hours 
Cooking time-1 hour

Ingridients-
  • Full fat milk-1 lt
  • Sugar-1/2 cup 
  • Condensed milk-1/2 cup
  • Cardamom powder-1 tbsp
  • Rosewater or gulab jal-1tsp
  • Chopped Nuts -1/4 th  Cup
  • Coconut flakes-1 tbsp
  • Dessicated coconut-2 tbsp
  • Saffron strands-Few
  • Rice-1 cup
  • Powdered sugar- 1 tbsp
  • Cardamom powder-1/4th tsp
  • Ghee-1 tbsb
Method-
  • Soak the rice in plenty of water for atleast 1 hour
  • After one hour ,Grind the soaked rice with powdered sugar, and cardamom powder.
  • Take a nonstick pan and cook the rice mixture for 3-5 minutes on medium flames till it comes together and starts looking like a mash
  • Once the mixture cools down a little bit,Form small balls out of it.
  • Pour the full fat milk in a heavy bottom pan ,put it on high flame and bring it to a boil stirring continuously
  • Once the milk starts to boil ,add both the sugar ,Condensed milk and dessicated coconut
  • Simmer the milk on low flame stirring continuously in between till it is reduced to half
  • Meanwhile ,heat up the ghee in a pan,and fry all the nuts  and coconut flakes and keep aside
  • Also,Soak the saffron strands in the rose water and add it to the milk.
  • Dump the rice balls into the milk and cook for another 15-20 minutes
  • Granish with fried nuts and coconut flakes
Serving suggestions
  • Serve it cold in an earthenware with some rose petals on top.
