Laddoos are really important part of any frstival in India,and diwali is not an exception.
Every diwali,I make a big batch of these sweet balls and these always turn out to be a massive hit.
Well ,today i am gonna share my recipe for the perfect laddoos.
Ingridients:-
- Besan or bengal gramflour-1 cup
- Milk powder-1/4th cup
- Cashewnut powder-1 tbsp
- Salt-a pinch
- Ghee -for frying
- Pitachios-12
- Sugar-3/4 th cup
- Water-1 cup
- Cardamom pwder-1 tsp
- Star anise- 1
- Rose water-1 tsp
- Saffron strands-a few
Method:-
- In a bowl,mix the besan,milk powder,salt and cashwenut powder .
- Add enough water to make a thick batter and keep whsiking for atleast 15-20 mins to incorporate as much air as you can
- Set aside for 20 minutes
- Meanwhile,Take a sauce pan,add the sugar,water ,star anise and bring to a boil.
- Let it boil for 15-20 minutes till the syrup reaches the one string consistency.To check this,take a little bit of syrup on the back of your spatula,allow it to cool down a little bit,then dip tour index finger into the syrup and stick tour thumb and pull away.It should form a single string.
- Now swtich off the flame,remove the star anise and add the rose water and saffron strands.
- Now allow the syrup to cool down just a little bit
- Now In a frying pan ,Heat up some ghee upto 170degrees celsius
- Whisk the besan mixture lightly and pass it through a perforated spatula depending upon the size of boondi you want to have in your laddoos
- Fry for around 4-5 minutes over medium flame
- Take out on a kitchen paper .
- Now mix the fried boondis in the syrup and let it soak the syrup completely
- Now Form laddoos out of the mixture
- Stick one piece of chopped pistachios on top of each laddoo.
Tips :-
- Incorporating air while whisking the besan mixture is really inportant as it makes the laddoos really light
- Dont Fry for too long
- Make sure the consistency of your sugar syrup is right.
