Another day at baking..well! well! well! this time its "BRIOCHE"...I thought to give it a bit of twist making it trilayered and adding a thin layer of garlic and chilly butter in between each layer.Trust me on this,the richness of the butter gives it the right amount of crispiness and flakiness........do try and enjoy :)
INGRIDIENTS
maida or refined flour- 6oogms+100gms for dusting
yeast-7gms
sugar-1.5 tbsp
salt- 1 tbsp
milk powder-2 tbsp
FOR GARLIC BUTTER-
butter- 150gms
garlic-8-10 cloves
red chilly flakes-2 tsp
METHOD-
1)- Seive the flour ,sugar and milk powder
2)-Take the yeast into a small bowl and add sugar and water to it.keep it aside till it starts frothing
3)-Add the yeast into the flour and water to kneed into a supersoft dough
4)-Add salt at this point to prevent over fermentation
5)keep the dough aside for 1 hr or till it doubles in volume
6)-Now in a separate bowl add butter grated garlic and chilly flakes and mix well
7)-Roll four thick chapattis out of the dough and spread the butter in between each chapatti and place it one over other
8)-Give it a desired shape and bake at 180 degrees for 20-25 minutes
